Ingredients:
- 1 lb beef stew meat
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 potatoes, peeled and chopped
- 1 can of diced tomatoes
- 2 cups beef broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tablespoons of vegetable oil
Directions:
- Heat the oil in a large pot or Dutch oven over medium-high heat. Add the beef and brown it on all sides. Remove the beef from the pot and set it aside.
- Add the onion, garlic, carrots, and potatoes to the pot and cook for 3-5 minutes, until they begin to soften.
- Stir in the diced tomatoes, beef broth, thyme, rosemary, and salt and pepper. Bring the mixture to a boil.
